New York Strip Steak with Roasted Corn Relish

Here are easy ways to make these recipes at home:
New York Strip Steak
• 4 12 oz. New York strip steaks
• kosher salt
• black pepper
1. Allow 20 minutes for the steaks to reach room temperature. This allows for even cooking temperature from the get go.
2. Preheat the grill on high.
3. Place the New York strip steaks on the grill with tongs. Never pierce the surface of the steaks with a fork; this allows the juices and flavor to escape during the grilling process.
3. To get nice criss-cross grill marks on the steak, rotate it 90 degrees after about 2 more minutes. Repeat after you flip to duplicate on the other side of the steak.
4. After 2 more minutes, you are ready to flip the steaks. Pick them up and flip them over.
5. Now grill them for a final 2 minutes and they should be ready. Take the grilled steaks off the grill and let them rest for at least 5 minutes before serving. This allows the juices inside the steak to distribute evenly. Remember, you can always stick them back on the grill for a few minutes if they aren't done enough.
Roasted Corn Relish
• 5 ears corn
• 1 red bell pepper
• 1 cup quartered cherry tomatoes
• 10 basil leaves chopped
• juice of 1 lime
• 2 Tbsp olive oil
• kosher salt
• black pepper
Always cook extra fresh corn to use in a recipe the next day. Simply place the corn on a hot grill until blackened. Cut the corn off then toss in bowl with fresh chopped red pepper, quartered grape tomatoes, basil, lime juice, and olive oil.
Roasted Asparagus and Whole Carrots
All you have to do is take some whole carrots and asparagus, toss them with some olive oil, maple syrup and rice wine and roast in the oven at 425 degrees for 25 minutes. When they're done, you''ll have some vibrantly colored deliciousness right out of the oven.
